UPDATE: It’s been six months and I’m sorry!

Before you bite my head off for abandoning you despite promises of showcasing all the wonderful things my life had in store for you, let me just say that there are no words, rhyme or reason to explain why I’ve slacked off. Aside from the fact that I’ve been quite busy getting my shit sorted and enjoying life at the other end of the world.

To be honest, I don’t really think I’ve sorted my shit out very much. There’s still a lot of shit to be thought of but I’m getting there. So enough of me digressing and let’s get to the good stuff: how in the heck am I doing?!

Coming to London

I’m going to be very honest with you.

It wasn’t scary at all. I guess it helps when your good friend is a GC and goes all the way to bloody Heathrow to pick you up so your stubborn ass doesn’t give up on working out the public transport system and spending a fortune and a half on an Uber… or worst, a black cab. I’ve heard about how manic rush hour can be when catching the tube but nothing prepared me for what I witnessed. With my massive suitcase (it’s nearly as tall as me, no kidding), my backpack and a tote filled with unnecessary items, we caught about three different tubes and then the DLR and then finally made it back to Canary Wharf where I was crashing for a few days.

Despite how manic everything was, I was really, really excited to be here in this city that I had dreamed of coming to. So, despite my friend telling me I should have a nap, I got ready, went to Oxford Street and shopped til I dropped at Primark. At 5pm, I crashed SO hard I had to haul my ass back to her place and practically crashed out within seconds of lying on her bed. I then woke up at about 6.30pm when she’d been trying to contact me to let her in since I had her key… and then by 7pm I was out of it again.

I remember waking up at 3am, feeling absolutely shattered and wanting to go back to sleep. But alas, I had an interview to prepare for so I stayed up and did some life admin stuff, caught up with family and friends and did some interview prep.

The interview I had was with a university in a communications role and I’m telling you, I’ve never done an interview jetlagged before and I don’t recommend it. I remember trying to explain something but it just wasn’t coming to me so we sat in silence for like 5 seconds… that feels like a lifetime when people are waiting for you to say something. Needless to say, I got the job! Fittingly, I was told on Friday I got the job so I got completely shitfaced in Borough Markets with my friends and on Saturday, I experienced my first London hangover. It was awful but so, so worth it.

To top off my weekend, I managed to secure a room in a flat on the Saturday and then moved in on Sunday and I started my new job the following Monday so life moved very, very quickly for me.

I guess you could say it was somewhat smooth sailing and I was very fortunate to be able to get a job within a day of arriving. I kind of needed to anyways because I only came here with £1500 in my bank account (highly recommend you come here with more!). But miraculously, it all worked out and I was settled and very, very happy.

Right here, right now…

 My UK journey has been one that I well and truly do not regret. I’ve learnt so much in the last six month about myself, I’ve travelled a bit, I’ve met so many people, drank lots, slept less, tried heaps of things and made memories to last me a lifetime.

England (London in particular) is a whimsical, magical place. I was quite surprised by how easy it was for me to settle and call this place home. Despite the hustle and bustle (and occasional stress!) of being surrounded by 9 million people, I honestly wouldn’t trade the experience for anything else in the world.

My contract at my previous role ended so I’ve actually moved to the South West of England for a job and for a different experience. I’m currently based in beautiful Exmouth, which reminds me a lot of New Plymouth because the beach and estuary is close by and the views are absolutely stunning. I’m working in Exeter and I absolutely adore the city! I think I might move to the city in a couple of months just because I have so much love for it.

While I miss London like crazy, I figured I should spread my wings and experience the rest of England especially since I’ve got 18 months left on my visa. If I could stay longer, I’d totally still be in London.

So yeah, that’s my mini update!

I’m not going to overwhelm you with lots of information because six months is a long time and I’ve got HEAPS to share so I’ve broken up the content over a few different posts.  They range from tips/tricks/advice/what I’ve learnt, life stories/experiences and just general blogging of my travels.

February Bakes: the most amazing coconut and chocolate slice

I’m really excited about sharing this recipe with you because it’s a classic in my family. My grandma used to make it for us all the time and it’s quite the treat. It’s more-ish without being too sickly, it’s comforting and chocolatey and best enjoyed with a steaming, hot cup of Earl Grey.

When my grandmother passed away, we stopped having the slice because nobody really knew how to make it (despite grandma teaching us how to make them!). It didn’t help that the original recipe had disappeared from her recipe box either. One day, I decided I was going to find a way to emulate the recipe and then I was going to share it with the world so we can all enjoy grandma’s killer slices!

Guess what? That day has finally come!

It all started with me trawling through her recipe box to find something similar to the base of the slice; something that was made in the way that I remember them being made. I came across her coconut chocolate biscuit recipe and I thought ‘yeah this could work’. Look at how old school the look and feel of grandma’s recipes is!

To finish off the base, I made a basic chocolate icing, spread it all over the top like a disease and then sprinkled lots of desiccated coconut and voila! It tastes exactly how I remembered it to taste. I’m pretty sure I’ve made this about four times in the last month and a bit… yes, counting the one I burnt.

Best of all, it’s so easy to make and (depending on your willpower) lasts quite a while! I hope you give it a go!

Ingredients

½ pound of butter (I calculated this to be approx. 226g of butter – it may be a bit off from ½ pound but it works!)

1 tbsp of cocoa powder

1 cup of sugar (I use brown sugar)

1 tbsp golden syrup

1 cup of desiccated coconut

2 cups flour

2 tsp baking powder (or ½ tsp baking soda)

Pinch of salt

50g of butter (for the icing)

1 ½ cup of icing sugar

1 tbsp cocoa powder (for the icing)

2-3 tbsp of boiling water

 

Method

In a saucepan, mix ½ pound of butter, 1 tbsp cocoa powder, sugar and golden syrup and melt over a low heat.

Once it’s melted, leave it for about 20 minutes to cool down. Aim to turn off the heat as soon as the butter is melted – you don’t want to overcook it as the mixture will split and it’s not very nice when that happens.

When the mixture has cooled, preheat your oven to 160 degree celcius (fan-forced). Add the flour, baking powder or soda, coconut and salt into the mixture and combine them all together.

 

Spray cooking oil or use straight butter/oil onto a thin baking tray. Spread the mixture evenly and then throw it into the oven for about 20 minutes or until a skewer inserted into the centre comes out clean.

I just want to point out as well that it may seem uncooked and you’ll be tempted to keep it in the over for longer but don’t do that because it will burn. Get it out of the oven after about 20 minutes even if it’s still soft because when it’s sitting there cooling, it’ll harden.

Leave the slice out to cool for about 5-10 minutes.

To make the icing, mix 50g softened butter, 1 ½ cup of icing sugar, 1 tbsp of cocoa powder and 2-3 tbsp of boiling water in a bowl. If your icing is too thick, add more boiling water. Mix, mix, mix and you should end up with a glossy, semi-thick chocolate icing.

Remove the slice from the tray. Spread the icing over the top and sprinkle lots of coconut over it. As you can see, no coconut gets left behind in my slice!

Lastly, enjoy.

I love this slice so much and it somehow keeps me close to my grandma. It’s honestly the ultimate comfort food and the best kind of pick-me-up when you’re having a bad day. Although they’re not kind to the waistline, they’re definitely kind to the soul.

Getting hygge with the heat

I was recently introduced to a new word/concept – hygge (pronounced hue-guh, not hee-gi as I keep thinking it as). It’s a Danish word that can’t be described using one English word. It’s probably best described as a feeling of cosiness, content, satisfaction; a moment that’s just plain special from enjoying the simple things in life. It even gives me fuzzies just saying the word. But it’s not just confined to a feeling – it’s also about your surroundings such as your home décor and with loved ones.

We’ve all experienced hygge in some way, shape or form without realising it; reading a book under the tree, enjoying a hot chocolate in warm, fluffy pjs in the middle of winter and even just watching TV and chillaxing are all examples of hygge moments. While I would describe it as ‘hygge moments’, to the Danish people hygge is their way of life. Research* tells me that the word hygge was made famous in the UK in 2016; so famous that it earned a spot in the Collins Words of the Year for 2016. Soon after, the Americans started raving about it. So I guess it’s fair to say that hygge is quickly making headways around the world (although it makes me wonder why it took me so long to get acquainted with the word? Maybe it’s because I’m from New Zealand and it takes a million years for things to get down to this corner of the Earth…).

While the words ‘cosy’ and ‘fuzzy’ are usually associated with wintertime, I think hygge can also be experienced in the summertime. No I’m not asking you to break out the fluffy polar bear PJs and wear it in this 24 degree heat or start a fire in the scorching warmth and sit next to it while attempting to enjoy a book and also trying not to melt. There are lots of different ways to experience cosiness and well, hygge, even in the heat.

Here’s are my top six ways of creating and experiencing a hygge atmosphere in the hot weather: 

Have a bath

Don’t scream or panic. I promise you the heat hasn’t got to me and I’m not crazy. Yet. You know how we have warm baths in winter because it’s relaxing, warming and oh so comforting? Well, why not have a cool bath in summer? It produces the same effects – relaxing, warming and comforting without sharing your water space with others a la the beach or the public pools. Plus you get the added bonus of adding a bath bomb to create your own little galactic and glittery cocoon with bubbles. Delightful.

To create a more comforting and cosy atmosphere, why not light a candle, pour yourself an iced tea and read a book? I promise you won’t die of hyperthermia if you stay in the bath for hours. Here’s a pic of the last cool bath I had:

Plant it up

Summer makes me think of bright colours and light, airy spaces. Adding succulents and/or flowers in a room is guaranteed to create a summery atmosphere – I guess in some ways it’s like bringing the outside to the inside (if that makes sense). Just being near flowers makes me feel warm and fuzzy on the inside.

I love the aesthetic of succulents and the fact that they’re low maintenance. Its unique and pointy leaves adds an edge to wherever you place it. I got these at the farmers market and absolutely adore them. If you’re in New Plymouth, it’s from the Saturday markets behind the old Mill.

Enjoying a cuppa

I love tea. Earl grey, jasmine green tea, lady grey, chamomile… I could go on. But when you’re hanging in average 25-degree weather, the last thing you want is a hot drink. Nah uh. But if you’re like me, you don’t want to give up your comforting beves…

Why not enjoy them chilled by throwing in some ice cubes? I particularly enjoy a cuppa cold chamomile.

Relax under the shade

 I think I’ve made this pretty clear in heaps of my posts but I love reading. While I never mind my surroundings when I read, I always find it more enjoyable when I read in a cosy, chilled spot.

In summer, it’s hard to find a cool spot indoors… unless you have air conditioning or are sitting directly in front of a fan. I don’t have the pleasure of either of these luxuries so I like to sit outside and pray for a breeze.

In particular, I love sitting under the trees to get a bit of shade.

My parents’ garden is set up pretty nicely. It’s like a little wonderland and I spend a lot of time reading in the hammocks. I always find myself with a smile of my face when I’m swinging in the hammocks with a book or kindle in my hand. I know we’re not all lucky enough to have a set up like this but I’m usually quite content with lying on a blanket under a tree. Pure bliss.

Breaking out the summer sheets 

In wintertime, I usually break out the dark coloured duvets and bed sheets. To me, the darker shades are comforting and warm and it makes me want to dive into the sheets and I know I’m going to be nestled in fuzziness. In summertime, it’s quite the opposite. To achieve the same feeling, I break out the bright, light and airy sheets.

I love these sheets. If you’re in New Zealand, you can get them from Briscoes. They have a cool, hippy vibe to them and the flowers, leaves and bright colours makes me so happy. Plus its so cool that after a long day, all I want to do is just dive into bed and unwind and enjoy the moment of being relaxed and joyful.

Have a picnic

There’s nothing like embracing summer by heading out into the great outdoors and taking in some sweet fresh air. Enjoying a wine/beer/alcoholic bevy of choice with a fruit and cheese platter under a tree at a park and enjoying a gorgeous view is one of life’s simple pleasures. And guess what? You can do this with family and friends as well. This is sharing a hygge moment with loved ones at its finest.

Reflections

Wow. 2018. You’re finally here. I must say I’ve been really looking forward to you. I’ve got so much planned and I can’t wait to create new memories with you.

2017; you’ll always be a bittersweet memory. We went through many highs and many lows (let’s be honest – more lows than highs). But you’ve made me stronger. I’m glad you happened and you’ll always serve as a reminder of the strength that I have within myself; of the courage that I can call upon when shit really hits the fan.

I hope you all had a safe and merry New Years and a wonderful 2017 Christmas. Here’s to a 2018 that will hopefully raise the roof.

I’ve always found it interesting that when we’ve had a shitty year, we just can’t wait for it to end because we want to start fresh. So when the countdown starts, we’re all waiting in anticipation for something incredible to happen when the clock hits 12.00am. What we’re waiting for, I have no idea. A router reset? For our memories to fade? For everything to just change? Let’s be honest though, nothing really changes. Fireworks may go off, we’ll cheers to a better year and we’ll sing and dance. But our problems are going to follow us into the new year if we don’t acknowledge our troubles or strive for change. Perhaps it’s the comfort of knowing the year has come to an end and a new one has begun. But the thing is, we can always start fresh at anytime, we don’t need to wait for the new year. Anyways, I’m going off on a tangent, I’ll stop here.

I’m sure many of you can relate when I say that a lot has happened last year. Towards the end, I did a lot of self-reflecting about what I wanted, what’s important to me, what I hoped for and what I need to do to get to where I want to be. I made some changes for the better; acknowledged that some things needed to change but I’m still trying to work out what I need to do to change it; cried a lot; laughed a lot; held on to bitter memories; let go of said bitter memories; prioritised my family and myself; finally went paddle boarding!!! – The list goes on and on and I don’t want to bore you.

I think my year started right – I explored my creative side by setting up my bullet journal, I went for a swim at the beach, I ate fish and chips and I saw Bryan Adams perform live at the Bowl of Brooklands in New Plymouth. Mind you, the weather was absolutely shit with rain and wind and I got absolutely saturated. But hey, I had some sweet gumboots on, gems on my face and I got to dance to ‘Summer of 69’ in the rain, along with everyone else. It was incredible.

It was kinda hard to get a decent photo since it was such a wet, wet evening so please don’t laugh at the poor photography skills (or do laugh, idk).

I’m thinking that this year I want to experiment more and do things that scare me, even if it’s a slight scare.

So what does this mean for this blog? As you can see, it’s undergoing some changes. I’ve created another logo which I think is a huge step up from the last one (haha) and I’m working on changing the look and feel of the blog. I’m also planning on trying out different content and seeing how it goes. I guess it’s going to be a time of trial and error and I hope you stick around for the journey to give me feedback on my content and share your thoughts on what you’d like to see more or less of.

Before I go, I just want to quickly announce that in three months, I’m going to be embarking on probably one of the most exciting and scariest adventures: I’m moving to London. More details of the planned trip to come!

No BS affirmations singletons need to remember

Listen up single people; we’ve all been there. We’ve had days where we know being single is awesome and we value our independence and freedom and we have days where we drown ourselves in a pool of our own tears because shit, why are we single and why won’t anyone love us?

I’m definitely one of those people. I spend more time embracing singledom than I do worrying about not having someone to love and to look after me and cuddle me when times get rough. But even though I’m happy with my single status, sometimes I need to remind myself that being single is all good in the hood. More often than not, we’re single because we choose to be! So before you wallow into your pillow and tuck into a huge tub of Ben and Jerry’s, I’ve compiled a list of no-bull affirmations to remind you that hey, single is actually okay.

You’re not going to be single forever

No, I’m not saying this just to make you feel better about your current situation. You WILL find someone when you’re ready. Hell, you’ll probably find someone when the last thing you want is to find your perfect match! I’m a firm believer of there being someone for everyone and right now, you may not have someone but that someone will turn up and you’ll be like “OH HEY YOU’RE MY SOMEONE” and then you’ll remember this post and be like “OH THAT PERSON WAS RIGHT”. I love happy endings.

You can be selfish and look out for number one guilt-free

It’s important to always look out for number one – no I don’t mean partners, I mean you. Being single is good for the soul because you can be selfish and do things for only you. You don’t have to factor someone else’s’ thoughts and opinions into your decisions; the only one that matters is yours.

Want to buy that Louis Vuitton bag? Fucking do it. Want to stay out with your girls until 7am in the morning and make poor decisions and wind up waking up in some hotties bed? Who’s gonna stop you? Want to dye your hair fluorescent green? YOLO dude, YOLO.

The point is you don’t have a significant other to influence your decisions. You’re making decisions for you. Besides, you end up learning more about yourself, what makes you tick, have a stronger sense of self and end up being completely self-relient which is very sexy might I add. These are very important qualities to have, not just as a single person but for when you’re in a relationship as well.

And besides, you can order all the foods and enjoy it yourself without having to share with the other person… most important point…

You could be in a relationship if you wanted to

And you know I’m right. You could download Tinder or Badoo or OkCupid, hit people up with some smooth pick up lines, go on a few dates and presto, suddenly you’re in a thing. Long or short term, the point is you’re in a thing.

But you’re not. You know why? Because you don’t want to be. Because you don’t want to lower your standards or make compromises because you know your self-worth. Better yet, you’re still trying to work it all out so until you do, you’re just going to stay single. And hey, that’s totally okay.

Relationships are HARD

And that’s the reality of it. We ALWAYS see the good parts of relationships, whether it’s in rom-coms, sitting in the theatre or at dinner next to a loved up couple or even when we’re at work and our co-workers give us the 4-1-1 on all the romantic things their partner’s done for them.

DON’T DESPAIR. Deep down you know it’s not all smooth sailing and it takes a lot to keep a relationship afloat. You gotta take the good with the bad. When you’re single, you’re investing your emotions and energy on yourself, your family and your friends and let’s be honest, sometimes that’s more than enough. So embrace your somewhat free time while you can because as soon as you get into a relationship, you know it’s going to take a lot out of you.

And just think about the time your best friend and their partner were fighting over something petty and then they tried to get you involved and you’re like HELL NO and then you bolt and then think to yourself “thank fuck i’m single”. Or the time you had to comfort your friend because their partner was out drinking and didn’t tell them and they’re currently experiencing trust issues? Yeah, just keep hold of that memory. Here’s a lil lol for you:

Good things take time

This is applicable to so many things, not just relationships. It’s important that we don’t just settle for the sake of settling. It’s also important that we take the time to look at ways to get to know ourselves and love ourselves. Because it’s true what they say: how can you love and appreciate someone else when you can’t even love and appreciate yourself?

Take the time to cultivate and nourish yourself before you commit to cultivating and nourishing someone and something else.

So there you have it people – my no BS affirmation list for singletons. Hopefully you found it useful. Little reminders are so important! I know my single friends definitely need these reminders from time to time and it’s totally okay.

Today, I’m choosing myself

Today’s blog is a creative piece that I felt I needed to write. It’s almost like a letter saying hello to myself and goodbye to the old. I hope you like it as much as I’ve enjoyed writing it.

There have been plenty of days where I’ve thought about you and wondered how you were doing, what you were doing, if you’re thinking about me, if you’re thinking about us and if you’re counting the hours, minutes and seconds until we see each other again.

Today is not one of those days. Today is the day where I’m going to think about how I’m doing, what I’m doing, what I’m going to accomplish and who I need to be. Today is the day that I’m going to stop wasting my time looking at my phone, waiting for your message or worst yet, waiting for you.

Today I’m going to scroll through memes and enjoy them without thinking of sharing them with you; I’m going to lie in the spot that you used to sleep in and enjoy the space instead of wishing you were in it. I’m going to text my friends and get excited when they reply without wishing it was you I was texting. I’m going to walk through the park in the rain with a smile on my face without wishing you were there with me. Today, I’m going to do everything for me without you having any power or influence over any of my decisions and my happiness.

I know it’s not going to be an easy ride but it starts with one day; a day to acknowledge that you’ve had plenty of chances and opportunities, that I’ve given you so much more than you’ve given back, that I’ve lost myself with you and that I’m better off without you. Today I’m choosing myself; I’m going to let go of all the thoughts in my head and the heaviness in my heart and I’m going to heal and come out stronger.

It’s easy for us to choose others’ happiness and thoughts over our own; it’s harder to focus on living and enjoying life when we’re too busy thinking about what we’ve done to push someone away. It’s not easy loving yourself when you’re busy loving someone else and blaming yourself when they don’t return the feelings because you feel like it’s your fault. Of course it’s your fault; why aren’t you perfect? You need to be more perfect. You hate yourself for not being their idea of perfection.

But that’s no longer going to be case. I am perfect; they’re just not perfect for me. Today I choose to accept myself and my shortcomings and I’m going to listen to myself. I’m going to learn to love myself and work through my flaws and I’m going to grow and become stronger. It’s the beginning of a decision that will last forever. It’s the beginning of me choosing to no longer put you ahead of me. It’s the beginning of me forgetting you and choosing me.

Today, I’m choosing myself.

You do you boo

I’m back. I realised that I lied in my last post about spamming you guys with blog posts after being sick. I didn’t lie on purpose; I had every intention of spamming you guys with blog posts but unfortunately, the sickness took over and I was left bedridden and unhappy.

Now, after two months, I finally feel well enough to get my life back on track. And part of that is getting back to blogging.

Let me tell you, when you’re sick, particularly bedridden, you’re left with a lot of time to yourself to think, worry and stress about things. I chose to view it as an opportunity to reprioritise my life and think about what’s actually important to me. I thought I’d share with you the top three things I learnt and am vowing to keep in my top three priorities.

Work is not important

I repeat, work is not important. Sure having money is lovely but at the end of the day, you need to think about you and make sure you’re well and happy before you commit to your career.

I know this seems like quite an obvious point but I’ve always been a high achiever so I ended up working long hours just to try and please and get results that are beyond 100%. A recurring theme from feedback I’d get from my managers is that sometimes 80% is perfect and I should accept that. Weeeeell, took me getting sick to learn that lesson.

Last week was my first week at work and I’ve been taking it easy. I’m slowly learning that I don’t need to stress myself out in order to get brilliant results. And I don’t need to break my back on overtime that’s basically unjustified. Like my last manager used to say to me, sometimes 80% is good enough so learn to accept that when you’ve given it your all and done your best, that’s all you can do and that’s all someone should expect of you.

You should be your number one priority

Another obvious one, but I think sometimes we need to be reminded that we should be looking after ourselves and making sure we’re our number one priority. Because let’s be honest, it’s unlikely that we’re anyone else’s number one priority. Sometimes life gets a bit crazy and we forget. And I know I’m not the only one that forgets!

Remember this is the only life you’ve got to live and it’s hard to live it to the fullest when you’re unwell. Trust me, I know.

Go home early, have that bath, buy that scarf you’ve been eyeballing for a thousand years, ask that girl that makes your coffee every morning out… (okay getting carried away). My point is, make sure you do you boo.

Life is short

A recurring theme in all these points but it’s true. Life is so damn short. Remember when you were younger and you thought life was moving so slowly and you just wanted to grow up and make your own rules and do all these awesome things? And then you finally grow up and you’re like “oh shivers, now I’m running out of time to do all those awesome things cause time is moving so fast”.
